Winemaking: This was the first crop of Pinot Gris grapes from Three Miners Vineyard, two different selections were made in the vineyard to try and enhance the multitude of aromatics and textures available from the grapes. The grapes were treated in the following way; The grapes were whole bunch pressed, some lees were taken to fermentation. Both selections fermented individually, one with indigenous yeast and one with a cultured yeast strain. Coolish fermentation between 12-18 degrees celsius, fermented for three months. Some residual sugar retained to balance the natural acidity, minimal fining. Wine has undergone filtration due to its residual sweetness.
