: Two different selections were made in the vineyard with distinct differences to try and enhance the multitude of aromatics and textures available from the grapes. Both selections were fermented individually, one with indigenous yeast one with a cultured yeast strain. Both ferments were whole bunch pressed, one ferment had eight hours of skin contact prior to pressing, lots of lees taken to ferment. Temperature of ferments 13-20 degrees Celsius, fermented for six weeks. Stopped the fermentation with approx 6 g/l residual sugar to balance the wine, minimal filtration. Wine has undergone filtration due to its residual sweetness.
