: This was the third harvest of Pinot Gris grapes from Three Miners Vineyard. The grapes were treated in the following way; The grapes were whole bunch pressed. Some lees were taken to fermentation. Fermented with an indigenous yeast strain. Coolish fermentation between 12-18 degrees celsius. Fermented for one month. Rested on its yeast lees for 8 months. Some residual sugar retained to balance the natural acidity. Minimal fining. Wine has undergone filtration due to its residual sweetness.
