A warm rich mouthfeel and a lingering crispy finish Palate: A warm rich mouthfeel and a soft finish Food Suggestions: Crayfish and subtle seafood dishes, blue cheese dishes Cellaring: Drink now and cellar for 2 Years     Winemaking: This was the first crop of Riesling grapes from Three Miners Vineyard, two different selections were made in the vineyard to try and enhance the multitude of aromatics and textures available from the grapes. The grapes were treated in the following way; The grapes were whole bunch pressed and some lees were taken to fermentation. Both selections fermented individually, one with indigenous yeast and one with a cultured yeast strain. Coolish fermentation between 12-18 degrees celsius, fermented for six weeks. Some residual sugar retained to balance the natural acidity, minimal fining. Wine has undergone filtration due to its residual sweetness. »  Download Tasting Notes (PDF, 748kb)
